Rosh Hashanah Honey Apple Bundt Cake

Honey and apples are common ingredients during Rosh Hashanah. This Jewish New Year, enjoy this delicious cake that’s made sweeter by the fresh honey and apples.

Ingredients

Cake “Goop”

  • ¼ cup vegetable shortening
  • ¼ cup vegetable oil
  • 1/3 cup flour

Icing

  • 1 cup powdered sugar
  • 1/4 teaspoon vanilla extract
  • 1 tablespoon water or non-dairy creamer

Cake

  • 4 large granny smith apples
  • 3 eggs
  • ¾ cup honey
  • ½ cup white sugar
  • ¼ cup brown sugar
  • 1 ¼ cup oil
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • ¼ teaspoon allspice
  • ½ teaspoon salt
  • Pinch of ground cloves

Method of Preparation

  1. Prepare the cake ‘goop’ by combining the flour, vegetable oil, and shortening. Then, brush the cake goop inside of the baking pan instead of spray oil or butter. This will help the cake release from the pan without any sticking.
  2. To prepare the icing, combine the sugar, vanilla, and water and mix until fully combined. Cover and set aside.
  3. Preheat the Wolf Convection Oven to 300F degrees on Convection Mode.
  4. In a stand mixer fitted with the paddle attachment, beat the eggs for about 1 minute then add the sugar, brown sugar, vanilla extract, oil, and honey.
  5. In a bowl, mix together the flour, spices, salt, baking soda and baking powder. With the mixer on low speed, slowly add the dry ingredients to the wet ingredients until mixed together.
  6. Peel and grate the granny smith apples over a bowl to preserve the juice. Add the grated apples and juice to the batter and fold to combine.
  7. Add the batter to the prepared cake pan and place in the center of the oven on a sheet tray. Bake for 1 hour – 1 hour 15 minutes, or until a toothpick comes out clean.
  8. Let cool for five minutes before flipping the cake out onto a plate or wire rack. Let cool at least another 15 minutes before topping with the icing.
  9. Serve and enjoy
