Rosh Hashanah Honey Apple Bundt Cake

Honey and apples are common ingredients during Rosh Hashanah. This Jewish New Year, enjoy this delicious cake that’s made sweeter by the fresh honey and apples.

Ingredients:

Cake “Goop”

  • ¼ cup vegetable shortening
  • ¼ cup vegetable oil
  • 1/3 cup flour

Icing

  • 1 cup powdered sugar
  • 1/4 teaspoon vanilla extract
  • 1 tablespoon water or non-dairy creamer

Cake

  • 4 large granny smith apples
  • 3 eggs
  • ¾ cup honey
  • ½ cup white sugar
  • ¼ cup brown sugar
  • 1 ¼ cup oil
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • ¼ teaspoon allspice
  • ½ teaspoon salt
  • Pinch of ground cloves

Method of Preparation:

  1. Prepare your cake ‘goop’ by combining the flour, vegetable oil, and shortening. Then, brush the cake good inside of your baking pan to use instead of spray oil or butter. This will help your cake release from the pan without any sticking.
  2. To prepare the icing, combine the sugar, vanilla, and water and mix until fully combined. Cover and set aside.
  3. Preheat your Wolf Convection Oven to 300 degrees on the Convection Mode.
  4. In your Wolf Gourmet Stand Mixer, begin beating the eggs with the paddle attachment. Then add the sugar, brown sugar, vanilla extract, oil, and honey. Measure the honey after you measure the oil, which will avoid the honey from sticking as much.
  5. Combine the flour, spices, salt, baking soda and baking powder. Combine your wet and dry ingredients together.
  6. Peel and grate your granny smith apples over a bowl to preserve the juice. Add the grated apples and juice to your batter and fold to combine.
  7. Brush your Bundt pan with your cake goop, and then add your batter.
  8. Place in the center of your oven on a sheet tray. Bake for an hour to and hour and 15 minutes, or until a pick comes out clean.
  9. Let cool for five minutes before flipping the cake out. Let cook for another 15 minutes before icing.
  10. Serve and enjoy
