Pretzel Chicken with Mustard Sauce

Ingredients
Marinade
- 1 ½ lbs. boneless skinless chicken thighs or breasts
- 1 ½ tsp. Dijon mustard
- 1 tsp. dried thyme
- ¼ tsp. garlic powder
- ¼ tsp. onion powder
- 1 Lemon, zest and juiced
- 1/3 cup vegetable/canola oil
- Salt and pepper to taste
Breading
- 2 cups crushed pretzels
- 1 cup panko breadcrumbs
- 4 (or more as needed) cups all-purpose flour, seasoned with salt and pepper
- 5 large eggs, beaten
Mustard Sauce
- 2 tbsp. whole grain mustard
- 2 tbsp. Dijon mustard
- ½ cup honey
- ½ cup yellow mustard
- ½ cup mayonnaise
- Salt and pepper to taste
Method of Preparation
- Cut chicken into 1” bite-sized pieces
- Combine all marinade ingredients together in a large bowl and whisk until incorporated.
- Add chicken bites to bowl of marinade and let marinade for at least 1 hour or up to 24 hours prior.
- Pulse pretzel rods in food processor until crumbs form but leave some bigger pieces for texture then combine with panko bread crumbs.
- Preheat vegetable/canola oil in a deep pot or large shallow frying pan to 325-350F.
- Once chicken has marinated, dredge into seasoned flour, patting off any excess.
- Dip chicken into beaten eggs, then dip into breading, coating each piece entirely.
- Drop chicken bites, one at a time into the oil and fry about five minutes until golden brown and crispy.
- While frying, whisk together all mustard sauce ingredients in a large bowl until combined.
- Once golden brown, remove chicken bites from oil and place on a wire rack or paper towel-lined tray. Do not stack the chicken bites. Sprinkle salt on top, serve with mustard sauce and enjoy!
