Pea and Parmesan Fritters

Golden crispy outside with a warm cheesy inside, these Pea and Parmesan Fritters are easy to create and delicious to eat!

Ingredients

  • 1 1/2 cups A.P. flour
  • 3/4 teaspoon salt
  • 1 tablespoon baking powder
  • 1/2 tablespoon sugar
  • 1 cup grated parmesan cheese
  • 1/2 tablespoon fresh thyme
  • Pinch of nutmeg
  • 1/2 bag of frozen peas, thawed
  • Juice + zest of 1 lemon
  • 1 Egg
  • 1 Egg White
  • Milk to combine

Method of Preparation

Puree ½ of the peas in a blender or food processor.  Combine all remaining ingredients except milk.  Drizzle in milk, slowly and mix until combined.

*Batter can be refrigerated up to 7 days

Preheat vegetable and/or canola oil in a deep pot or cast iron Dutch oven to 350°.  Using an ice cream scoop, scoop drop batter into the hot oil.  Fry for 3-5 minutes until golden and cooked through, making sure all sides are browned evenly.  Remove from the oil onto a paper towel lined sheet tray.  Serve immediately on top of a dollop of caramelized onion sauce.
