Mexican Street Corn
Without question this will be your favorite way to eat corn! This Mexican Street corn is a delicious and simple recipe that you will enjoy all summer long. The sweet summer corn with the creamy sauce, along with the salty cotija cheese makes for an amazing pairing.

Ingredients
Mexican Street Corn
- 7 ears of corn
- 1 cup cotija cheese
- 7 ears of corn
- 3 tbsp cilantro, diced
- 1 teaspoon chili powder
- 2 limes, charred (optional garnish)
Sauce
- ¼ cup mayonnaise
- 1 tsp cilantro, diced
- 1 tsp. hot sauce
- 1 tsp. ancho chili powder
- 2 limes (zest and juice)
Method of Preparation
- The first step is to shuck all the corn. For presentation we like to pull the husk down and only remove the hairs of the corn, but feel free to completely shuck all the husk off as well.
- Next, place all your corn inside your Convection Steam Oven on a perforated Steam Oven pan and steam at 210F for 7 minutes.
- While the Corn is steaming mix all your ingredients for your sauce in a mixing bowl and set aside.
- Once corn is out of the steam oven drizzle with olive oil, salt, pepper and char on your Wolf charbroiler or grill. Once desired char marks are achieved, remove from grill to serving platter and baste corn with sauce mixture and sprinkle on cotija cheese and cilantro. We like to serve our Mexican street corn with some grilled limes for an additional boost of flavor!
