Meaty Lasagna
With the kids back in school, ace the kitchen with this lovely dish, perfect for your M and E Series Ovens and Convection Steam Oven.
PREP TIME: 25-30 minutes
COOK TIME: 45-60 minutes
LEVEL: Intermediate
YIELD: 8-10 servings
Ingredients
1 pound ground italian sausage
1 pound ground beef
3 cups crushed tomato (or 24 ounce jar of marinara)
6 ounces tomato paste
3 tablespoons dried parsley flakes, divided
¼ teaspoon garlic powder
Sugar to taste
3 cups ricotta
2 eggs, beaten
½ teaspoon salt
½ cup grated parmesan cheese
1 ½ pounds shredded mozzarella cheese, divided
1 box lasagna noodles (can be parboiled)
Method of Preparation
- In a large pot, brown ground meat and drain excess fat.
- Add crushed tomatoes, tomato paste, 1 tablespoon parsley flakes, garlic powder, and sugar to taste. Simmer for 15-20 minutes to allow the flavors to meld.
- While simmering, combine ricotta, eggs, salt, 2 tablespoons parsley flakes, parmesan cheese, and half the shredded mozzarella cheese in a mixing bowl. Stir to incorporate.
- Grease a 9×13 inch casserole dish with oil or non-stick spray.
- Spread a ½ cup of sauce on the bottom of the casserole dish.
- Lay a double layer of lasagna noodles on top of the sauce. Spread 1/3 cup of the cheese mixture on the noodles and top with 1/3 cup of sauce. Add a single layer of noodles and repeat until you have reached the top. End with sauce on top.
- Sprinkle remaining mozzarella cheese on top of your assembled lasagna until completely covered.
To be done in the Convection Steam Oven
- Slide lasagna into oven, rack position 2. Set oven to 355F Convection Humid Mode. Insert probe into the middle of the dish, making sure to have the metal shaft completely covered. Insert opposite end into the receptacle, set probe temp to 170F. Bake until the alert temperature is reached, about 45-60 minutes. Remove from oven. Let it cool slightly and serve.
- You may also use the Gourmet Mode in your Convection Steam Oven. Under the Baked Dishes and Gratin tab, select Baked Dishes; Lasagna, Cooking, and the oven will do the work for you.
To be done in M&E Series Oven
- Preheat Oven to 350F, Bake mode. Cover lasagna with foil. Insert dish into pre-heated oven on either level 3 or 4. Set timer for 45 minutes. Once timer ends, switch mode to High Broil and Broil until cheese is golden and slightly charred. Remove from oven. Let cool slightly and serve.

Chef Tips
- Noodles can be parboiled. Boil until halfway cooked and rinse gently under cold water to stop the cooking process. Lay noodles flat in a 9×13 inch dish and cover with water until needed for assembly.
- Lasagna can be assembled up to a day before baking.
