Marry Me Chicken

This simply delectable sauce will have your loved ones saying, “I do!”

COOK TIME: 45 minutes
LEVEL: Easy
YIELD: 2-4 servings

Ingredients

4 chicken thighs – bone in, skin on

2 tablespoons olive oil

1 small yellow onion – finely diced

½ cup sundried tomatoes – finely diced

3-5 garlic cloves – finely diced

1 cup chopped spinach

1 cup chicken stock

½ cup heavy cream

¼ cup parmesan cheese

Salt and pepper to taste

Fresh parsley or basil for garnish, optional

Method of Preparation

1. Preheat a pan over medium high heat. Season the chicken thighs with salt and pepper. Add 1 tablespoon of oil to the pan and add the chicken thighs, skin side down. Sear for about 5 minutes, or until golden brown. Remove and set aside.

2. Add the remaining tablespoon of olive oil to the pan and add the diced onion. Saute for about 5 minutes, or until translucent and starting to caramelize. Add the garlic and sundried tomatoes. Continue to cook 1-2 minutes.

3. Add the spinach, chicken stock, heavy cream, and parmesan cheese. Stir until fully incorporated. Bring to a simmer and add the chicken thighs. Let simmer about 15- 20 minutes, or until the thighs are fully cooked.

4. Garnish with chopped basil or parsley, serve and enjoy!
