Lemon-Ricotta Pancakes
Spring is in the air with these light and airy lemon-flavored pancakes! This Simple and quick recipe that will sure to please anyone. Adding ricotta in the pancakes keeps them super moist. You can serve these with warmed syrup or some macerated berries. We like to add some fresh berries with a touch of sugar, lemon juice and zest for additional flavor. This recipe makes 12-14 pancakes.

Ingredients
- 1 cup ricotta cheese
- 1 cup milk
- 3 eggs separated large eggs
- ¼ cup of sugar
- 1 lemon juice and zest
- 1 ½ cups of cake flour
- 1 tbsp. baking powder
- ¼ tsp salt
Method of Preparation
- In large mixing bowl mix yolks, milk, sugar, lemon juice and zest until smooth. In same mixing bowl sift flour, baking soda, salt over the ricotta mixture and mix with a wooden spoon till just combined. Pre-heat the griddle on your Wolf Dual Fuel Range, Gas Range, or Rangetop to 325F.
- In a separate large bowel beat egg whites till it reaches stiff peaks. Using a rubber spatula gently fold eggs whites into ricotta mixture.
- Spray griddle with non-stick spray and ladle about a third of a cup of batter for each pancake. Once sides look cooked and bubbles on top appear the pancake is ready to flip. Once flipped cook on other side for an additional minute or two until pancake is cooked throughout. Repeat for the rest of batter and enjoy!
