Julia Child Inspired Creamed Carrots

Julia Child, the “Queen of French Cuisine”, is iconic for her simple and understated French dishes. This carrot dish inspired by Julia Child's Creamed Carrot recipe is a perfect side to your Thanksgiving, or any meal.

COOK TIME: 30-40 minutes
LEVEL: Easy
YIELD: 6-8 servings

Ingredients

2 pounds carrots, baby

2 yellow onions, sliced

4 tablespoons butter

1 tablespoon olive oil

2 bay leaves

1 sprig of sage

2 tablespoons flour

2-3 cups vegetable or chicken stock

1 tablespoon sherry or rice wine vinegar

2 tablespoons heavy cream

pinch of nutmeg

1 tablespoon parsley, for garnish

salt and pepper to taste

Method of Preparation

  1. Preheat a large sauté pan over medium high heat. Add the olive oil and onions. Season with salt and pepper. Sauté for 5-10 minutes, or until onions are translucent.
  2. Add the butter and flour. Slowly add 2 cups of stock, stirring constantly. Add the carrots, sage, and bay leaves. Add remaining stock if carrots are not submerged.
  3. Place a lid on the pan and cook about 10 – 15 minutes, or until carrots are tender.
  4. Once carrots are tender, remove the lid and add the vinegar, heavy cream, and a pinch of nutmeg. Cook uncovered about 5 minutes.
  5. Serve on a platter, and garnish with freshly chopped parsley.
