Hearty Potato Soup

Ingredients
- 4 Russet Potatoes
- 2 Carrots
- 1 White Onion
- 4 Cups of Stock
- 1 Cup of Water
- ¼ Cup of Flour
- 1 ½ Cups of Milk
- 1 Tbs Dried Oregano
- 1 Tbs Dried Basil
- 2 Tbs Olive Oil
- Salt and Pepper to Taste
- ¼ Cup Cheddar Cheese (optional)
- ¼ Cup Pancetta (optional)
Method of Preparation
- Peel potatoes and cut into one inch cubes. Peel the carrots and grate. Place potatoes and carrots in a large stock pot with the stock and water, and bring to a boil, then reduce to a simmer.
- Finely dice your onion, and sauté in a large pan with olive oil. Once translucent, add dried herbs, flour, and salt and pepper to taste. Slowly incorporate the milk while whisking.
- Once the potatoes are fork tender, about 20-30 minutes, add the onion mixture to the potatoes and bring to a boil.
- Serve with cheddar and pancetta, or enjoy it by itself!
