Gourmet Roasted Chicken with Vegetables

Ingredients
Chicken:
6 Lb Whole Chicken
2 Tablespoons Olive Oil
2 Teaspoons Salt
2 Teaspoons Pepper
2 Teaspoons Paprika
2 Teaspoons Fresh Thyme
1 Teaspoon Onion Powder
1 Teaspoon Garlic Powder
Potatoes:
2 Lb Baby Potatoes
2 Tablespoons Olive Oil
1 Tablespoon Fresh Thyme
1 Teaspoon Salt
1 Teaspoon Pepper
1 Teaspoon Minced Garlic
Zucchini:
3 Medium Zucchinis
1 Tablespoon Olive Oil
1 Tablespoon Parmesan
1 Teaspoon Salt
1 Teaspoon Pepper
Method of Preparation
- Combine the salt, pepper, paprika, onion powder, garlic powder, and fresh thyme from the chicken ingredients.
- Pat chicken dry with paper towels. Rub with 2 tablespoons of olive oil, and then rub spice mixture over the entire chicken. Place chicken on a wire baking rack set into a parchment lined sheet tray. Probe the chicken by placing the probe into the thickest part of the thigh, while making sure the entire probe is inserted and not hitting any bone.
- Place the chicken on Rack Level 2 of the Wolf M-Series Oven and plug the probe into the oven.
- Select “Gourmet”, “Meats”, “Poultry”, “Whole Bird”, “Under 12 Lbs”, “Unbrined”. The oven will walk through steps to properly cook the chicken and will mention when to rest the chicken before slicing and serving.
- Prepare the potatoes by cutting them in half, then mixing them with the salt, pepper, olive oil, thyme, and minced garlic. Place on a sheet tray lined with parchment paper. Place the potatoes in the oven about 15 minutes after the chicken is placed into the oven.
- Prepare the zucchini by slicing it into ½ inch thick rounds, and then coat with the salt, pepper, olive oil, and parmesan. Place on a sheet tray with parchment paper. Place the zucchini in the oven about 20 minutes after the potatoes have been placed in the oven.
- When the probe temperature has been reached, remove the chicken, potatoes, and zucchini from the oven and let the chicken rest for about 10 minutes before carving.
