Charred Artisanal Bread with Mussels in White Wine and Herbs

Charred artisanal bread soaks up a fragrant broth of mussels steamed in white wine, garlic, and fresh herbs. This rustic dish brings together smoky, crisp textures with bright coastal flavors for an elegant yet comforting bite.

Ingredients

  • 2½–3 pounds mussels, cleaned and debearded
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 2 shallots, thinly sliced
  • 3 cloves garlic, sliced
  • ¾ cup dry white wine
  • 1 handful fresh parsley, chopped
  • Zest and juice of 1 lemon
  • Kosher salt and black pepper
  • Rustic bread, sliced and charred

Method of Preparation

  1. Heat olive oil and butter over medium heat. Add shallots and garlic and cook until soft.
  2. Add mussels and white wine. Cover and cook until shells open, about 5 minutes.
  3. Finish with parsley, lemon zest, and lemon juice.
  4. Serve immediately with charred bread and broth.

Chef Tip

Mussels cook quickly. As soon as the shells open, they’re done. Any that stay closed should be discarded.
