Cauliflower Fried Rice

Ingredients
1 Head of Cauliflower
1 Large Bell Pepper
2 Carrots
1 Small Onion
2 Cloves of Garlic
1 Tbs Ginger
1/3 Cup Peas (Fresh or Frozen)
1 Bunch of Scallions
2 Eggs
1 Tbs Olive Oil
3 Tbs Soy Sauce
1 Tbs Mirin
2 tsp Siracha
2 Tbs Sesame Oil
Salt and Pepper To Taste
Method of Preparation
- Chop the cauliflower until it resembles rice. Cut the bell pepper, onion, and carrot into pea sized cubes. Thinly slice the scallions and use a microplane to grate the ginger and garlic.
- Preheat a large pan over your Wolf Gas Rangetop. Over medium high heat, add the olive oil. Add the onion, garlic, and ginger and sauté for 2 minutes. Then add the bell pepper and carrots and continue to cook for another 2 minutes.
- Add the cauliflower, peas, soy sauce, mirin and siracha. Stir thoroughly and create a well in the center of your pan. Crack your eggs in the center of the pan and stir them until they are mostly cooked, then stir to combine with the cauliflower mixture.
- Season with salt and pepper and finish with scallions and sesame oil. Serve and enjoy!
*Chef Tips*
Sesame oil loses its flavor with intense heat, so be sure to add at the end!
Most grocery stores sell frozen riced cauliflower to make this recipe even easier.
You can make this recipe gluten free by using Tamari Soy Sauce.
