Cast-Iron Burger

This is a quick and simple meal that will excite and satisfy your taste buds. Using the cast-iron creates a beautiful crust on your burgers which will be sure to make your families mouths water.



LEVEL: Intermediate
YIELD: 8 Burgers

Ingredients

2 lbs. of 80/20 ground beef
Yellow Mustard as needed
8 potato sesame rolls (or any of your favorite burger buns)
4 tbs high smoke point oil such as canola or vegetable oil
Salt and pepper to taste

Optional Ingredients:
Cheese, Mayonnaise, Thousand Island, Shredded lettuce, Grilled onions, Pickles, or any of your favorite burger toppings.

Method of Preparation

The first step is to portion all your burgers into 4 oz portions. If you don’t have a kitchen scale shape meat into a square and divide into 8 equal portions. When portioning your burgers, you want to roll them into balls just like you would a meatball.

  1. After you completed portioning burgers heat a large cast-iron pan on high for 5 mins on your Wolf Range or Cooktop. Drizzle a teaspoon of oil and toast all your bread.
  2. Liberally season burgers with salt and pepper on both sides and place ball of meat into skillet. Once placed in cast-iron take a spatula and press down spreading into a burger shape. Its good to have another spatula to peel off the burger if it sticks to your spatula. After you create patty on pan spread yellow mustard on top of the cooking burger (trust us on this one) Once you see a brown crust building on the sides its ready to flip. After its flipped cook for an additional minute and at this point you would add your cheese.
  3. Next take your burger off pan and repeat for the following burgers. Once taken off the heat burgers should rest for at least 5-10 minutes before eating so they retain all their juices.
  4. Now that all your burgers are ready assemble your burgers and enjoy!
