Hollandaise Sauce with the New Wolf Gourmet Blender!

There’s always something delicious being cooked up at Clarke’s Test Kitchen. On the heels of Chef Brittany Williams’ Spring Bruch recommendations, we decided to offer you a recipe and details for a Spiced Up Holandaise Sauce created by Stephanie,  Clarke’s Johnson & Wales Culinary Intern.

Stephanie’s Spiced-up Hollandaise Sauce

This hollandaise is not your typical recipe. The Wolf Gourmet Blender makes this hollandaise super quick and easy to whip up even for a weekday breakfast! With the addition of flavorful Old Bay Seasoning, a kick from cayenne and a fun added texture of poppy seeds; will definitely have your guests saying “mmm what’s your secret?” This is also a great recipe to add to a crab or even lobster eggs Benedict. With Wolf, you don’t need a special occasion.

  • 1 small shallot, minced, about 3 tablespoons
  • ¼- ½ teaspoon cayenne, depending on your taste
  • ½ teaspoon old bay
  • 4 large egg yolks
  • 4 tablespoons lemon juice
  • 12 tablespoons butter, melted and cooled slightly
  • 1 teaspoon poppy seeds
  • Salt to taste

In the Wolf Gourmet Blender, combine shallots, cayenne pepper, old bay, egg yolks and lemon juice. Blend on medium speed until combined and the mixture turns into a pale yellow. Remove top part of blender cap. With blender running on low speed, pour melted butter into clear reservoir; this will allow the butter to slowly drizzle into the egg mixture. Once all butter has been added, gradually increase speed to medium-high and blend for a few seconds until thickened and creamy. Stir in poppy seeds and salt to taste. You can also add a bit more cayenne pepper for some added heat.
