Ingredients
- 2½–3 pounds mussels, cleaned and debearded
- 2 tablespoons olive oil
- 2 tablespoons butter
- 2 shallots, thinly sliced
- 3 cloves garlic, sliced
- ¾ cup dry white wine
- 1 handful fresh parsley, chopped
- Zest and juice of 1 lemon
- Kosher salt and black pepper
- Rustic bread, sliced and charred
Method of Preparation
- Heat olive oil and butter over medium heat. Add shallots and garlic and cook until soft.
- Add mussels and white wine. Cover and cook until shells open, about 5 minutes.
- Finish with parsley, lemon zest, and lemon juice.
- Serve immediately with charred bread and broth.
Chef Tip
Mussels cook quickly. As soon as the shells open, they’re done. Any that stay closed should be discarded.
