4-6 mint leaves
Mint on springs for garnish
½ ounce simple syrup (equal parts sugar and water brought to boil and cooled)
2 ½ ounces good quality bourbon
Crushed Ice as needed
Place bourbon, mint and simple syrup in a glass first. Add halfway with crushed ice and stir. I don’t mile to muddle like most recipes as this can bring out bitter notes from the mint. Stir mixture until glass is chilled and frosty. Top with more crushed ice. Place straw and garnish with mint. When adding the garnish I slap the mint in my hand which brings out that aroma and place next to straw so each sip you really pick up that mint flavor.

Want an even more refreshing variation? Try a Jewel Spritzer! I add an additional ounce of bourbon and top with seltzer or club soda.
Same as making a traditional Belmont Jewel but top with seltzer after you place the mixture cocktail shaker in the glass.
