Perfect for the rainy Sunday

Ingredients:

  • ¾ cup whole wheat flour
  • ¾ cup AP flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ¼ cup wheat germ
  • ¼ cup flax seeds or chia seeds
  • ½ teaspoons baking soda
  • 1 cup low fat buttermilk
  • ¾ cup light coconut milk
  • 1 tablespoon honey
  • 1 tablespoon vanilla
  • Vegetable oil or butter for cooking
  • 2 cups maple syrup
  • 1 cinnamon stick
  • 1 cup black berries

Instructions:

  1. Mix all dry ingredients together in mixing bowl.  In a separate bowl, mix wet ingredients.  Combine wet and dry ingredients until just blended.
  2. Allow mixture to sit 10 minutes
  3. For the syrup, combine all ingredients into a small saucepan and heat over medium-low heat until berries are soft.
  4. Scoop or spoon batter onto pre-heated, greased griddle over medium heat.  Cook for 2-4 minutes on each side until browned and cooked through.  Serve with blackberry syrup and fresh blackberries.
