Ingredients:

  • ~2 cups leftover stuffing
  • ~2 cups leftover turkey, chopped
  • ~1/2 cup cranberry sauce
  • Stock or leftover gravy
  • 10 eggs
  • ½ cup half and half
  • Parmesan cheese to taste
  • Salt/pepper to taste

Instructions:

  • Mix together stuffing and turkey, add cranberry sauce, mix
  • Add stock or gravy to moisten mixture, then add parmesan cheese, salt, pepper and other herbs to taste
  • In separate bowl, whisk 10 eggs with half and half
  • Scoop stuffing mixture into mini muffin tin 2 Tablespoons at a time
  • Drizzle with egg mixture
  • Bake at convection 350 for 15-20 minutes until golden and cooked through
  • Makes ~3 dozen mini muffins
